Curried Crab & Dumpling (Tobago-Style!)
Ingredients:
🔸 4 blue crabs, cleaned and cracked
🔸 2 tbsp curry powder
🔸 1 tsp turmeric
🔸 1 can coconut milk
🔸 3 cloves garlic, minced
🔸 1 onion, chopped
🔸 2 pimento peppers, chopped
🔸 1 sprig thyme
🔸 Salt & pepper to taste
🔸 2 cups flour (for dumplings)
🔸 Water
Instructions:
1⃣ Make the dumplings: Mix flour, a pinch of salt, and water until a smooth dough forms. Roll into small balls and flatten slightly. Boil until they float, then drain.
2⃣ Prepare the curry base: In a large pot, sauté onion, garlic, pimento, and thyme. Add curry powder, turmeric, and a little water to form a paste.
3⃣ Add the crab: Stir the crab into the curry, ensuring each piece is coated.
4⃣ Simmer with coconut milk: Pour in the coconut milk and let the curry thicken over low heat.
